"Our focus will be rotisserie and fried chicken with fresh side dishes," said Friedberg, who owns the restaurant. "We like this location because it is close to Tokyo Joe's and Larkburger. I was born and raised in Boulder, and I'm excited to be opening in my hometown."
Friedberg said Yellowbelly will be using as much Colorado product as possible, with a menu that is almost entirely gluten free and a full complement of beer and wine.
"We have sharable meals for families and big groups for around $30," he said. "This location is close to Folsom Field, and we are hoping for some tailgating business this fall."
The 1,436-square-foot restaurant will be open from 11 a.m. to 9 p.m. daily.
Gart Properties LLC represented the building owner, and the tenant was represented by Craig Cohn with Solaris Development.
