Gluten-free bakery opening in Longmont

The gluten-free bakery and cafe is going through final inspections at 331 Main St. after the co-owners spent about $150,000 on extensive remodeling to the space. The bakery is named after the great-great-great grandfather of co-owner Jennifer Love Walter and the grandfather of co-owner Morgan Elizabeth Dalton. Both men were bakery owners.
Dalton's grandfather's middle name was Aime, which means "love" in French. Walter's great-great-great grandfather's name was Robert Love Sr., who started Love's Bakery in 1851 in Honolulu, Hawaii.
Gluten-free muffins, cupcakes and cakes at the bakery and café all will be made with proprietary recipes. The café also will feature other sweets, coffee drinks and fruit smoothies. Walter and Dalton also plan to sell their products at wholesale rates to coffee shops and other stores up and down the Front Range.
Specialties include a mint chocolate brownie, Black Forest cake and a variety of cookies.
Gluten is found in grains such as wheat and rye. Gluten-free products have become popular in the United States in recent years as more customers complain about symptoms related to celiac disease such as discomfort in the digestive tract and fatigue. Gluten causes inflammation in the small intestines of people with celiac disease.
