BOULDER - Q's Restaurant at Hotel Boulderado has closed after nearly two decades in downtown Boulder to make way for Spruce Farm & Fish, a new restaurant slated to open Aug. 5, National Oyster Day.

Q's closed on Sunday and is undergoing renovations that include the addition of an oyster bar.

The new restaurant will be geared toward fresh seafood and fresh locally sourced ingredients, with a daily menu concept that will see changes each day as ingredients vary. Q's executive chef Shawn Murrell will stay onboard and create the menu for Spruce.

"It's going to be an opportunity for Sean to put his mark on the menu," Boulderado's director of sales and marketing Clark Davis said.

Dave Query of Boulder-based Big Red F Restaurant Group started Q's, leasing the space from the hotel before transferring his lease and management of the restaurant to others. When the most recent lease expired, hotel management decided to take control of the restaurant.

Renovations to the kitchen are also being made to better accommodate a pair of bars at the hotel, License No. 1 and Corner Bar, which were both renovated in the spring.

"It's been a great run with Q's, but we wanted to put a little effort into making the kitchen work more efficiently," Davis said.

Davis said the restaurant employs about 25 people, who will remain on staff. The hotel is still running a restaurant, with dining on the second-floor mezzanine during renovations.
